Meal-Planning Monday: Avocados

Mmmm…avocados.  One of my favorite snacks is just whole, plain, creamy avocado.  Nothing fancy, no seasoning required.  Just slice one in half and hand me a spoon, and I am one happy girl.  I attribute all of my pregnancy weight gain to avocados.  And tall, icy glasses of nonfat milk.  The avocado obsession has stuck, but my love affair with milk faded shortly after birth.

Avocados are one of the most versatile fruits.  Best known as an ingredient in savory dishes in the U.S., the avocado is considered a dessert fruit in many countries.  Avocado can be found in everything from the predictable guacamole, sandwiches, salads, sushi and even ice cream.

Avocados sometimes get a bad rap for being high in fat; however, they contain monounsaturated fat, which has been linked to cholesterol reduction.  They are also high in Vitamins E, C, and B and potassium.
