These turkey pita burgers are super quick and easy to make. Slider-sized turkey and spinach patties are grilled and stuffed into pita pockets with fresh veggies and a spicy, tangy roasted garlic and jalapeno whipped feta. This is the perfect meal for spring and summer, and it makes for a healthy alternative to standard cookout fare when planning a warm weather barbeque. The Mini loves the tiny burger patties, so I like to double the recipe and keep pre-cooked patties in my freezer for days when I don’t have time to cook.
The whipped feta makes these pita burgers something special, but if you’re really trying to cut back on calories and fat, you could substitute it with a little bit of crumbled feta and a splash of greek vinaigrette, tzatziki or yogurt. For those who can’t handle the heat, you can always swap out the roasted jalapenos in the whipped feta for red bell pepper, kalamata olives, or sundried tomatoes – any of those options would be delicious with the roasted garlic and lemon.
Spinach Turkey Pita Burgers with Roasted Garlic & Jalapeno Whipped Feta
(serves 2 to 4, 30 minutes)
1 pound lean ground turkey
2 cups loose baby spinach leaves
1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon dried parsley
2 cloves roasted garlic, smashed; or 1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
2 pita bread rounds, halved
red onion, spinach leaves, tomato, red onion and cucumber slices (or veggies of your choice)
Prepare a batch of the whipped feta, roasting additional garlic for the burgers if desired. In a large mixing bowl, combine the ground turkey, spinach leaves, spices, garlic, salt and pepper. Mix with hands until well combined and shape into 8 equal patties.
Lightly brush a grill pan with the olive oil and heat over medium-high heat, or prepare your grill. Grill the patties until cooked through, about 5 minutes per side.
To serve, spread a thin layer of whipped feta on the inside of each pita half. Stuff each half with two burger patties, additional baby spinach leaves, cucumber, tomato, and red onion slices.
